Salmonella

Salmonella is a rod-shaped, motile bacterium, found frequently in animals ... especially poultry and swine.

Human infection often results from contact with contaminated water, soil, insects, factory surfaces, kitchen surfaces, animal feces, raw meats, raw poultry, or raw seafood. Infections related to vegetable sources mostly relate to surface contamination as opposed to internal bacterial sources.

Prevention: These precautions will minimize, not eliminate, risk.

Effective sanitation of food preparation surfaces,

Complete cooking of animal products (meat, fish, poultry).

Frequent hand washing during food preparation.

Segregation of animal (particularly poultry) preparation utensils from vegetable and fruit preparation utensils.

Thorough washing of fruit and vegetable surfaces as the initial part of the food preparation process.

Symptoms ... which usually manifest within 6 to 48 hours and last for 1 to 2 days include: nausea, vomiting, abdominal cramps, diarrhea, fever, and headache.
- I'm sure you recognize the symptoms ... they match the 24 hour flu, which is not really flu at all ...It's food poisoning, usually salmonella.
  - If your Dr. ever gave you tetracycline for the 24 hour flu, and it helped, you've probably had salmonella. (The flu is a respiratory virus, antibiotics have no effect.)

The Chronic Consequences of Salmonella ... arthritic symptoms, which may follow 3-4 weeks after onset of acute symptoms.

Salmonella can be fatal, though the risk is greatest to the very young or the elderly. "It is estimated that approximately 400 persons die each year with acute salmonellosis." Salmonella is the most common cause of "food poisoning".

Treatment :

There is no reliable conventional medical treatment for salmonella. That is, no consistently functional antibiotic.

Dealing with the symptoms ... 1000 mg of activated charcoal taken with a glass of warm salt water (1/4 to 1/2 tsp salt in 16 oz of warm water will often absorb a sufficient amount of the toxins to provide some relief of symptoms. Users repeat as necessary but not to exceed the recommendation on the bottle or the advice of your physician.

Patent medicine ... Colloidal Silver … "The method comprises the step of administering approximately 5 to 25 ml of silver composition, one to five times a day orally until there was a response. It kinda makes me wonder if physicians are afraid to try remedies that don't require a prescription ... I mean, when there is an available patent medicine that appears to remedy a problem, some physicians let their patients die anyway. Perhaps I am being too harsh, maybe they're just uninformed.

Salmonellosis ..."Every year, approximately 40,000 cases of salmonellosis are reported in the United States.

Because Salmonellosis is common and frequently mild, as a general rule only severe cases are diagnosed or reported. The actual number of infections may be thirty or more times greater than those reported (1,200,000 CDC estimate). (I suspect a "report rate" below 1% yeilding an annual infection rate in excess of 4,000,000…scott)

According to the CDC "Salmonellosis is more common in the summer than winter." Which makes sense because the warmer summertime temperatures, in food storage and preparation areas, is more conducive to salmonella colony proliferation than the relatively cooler temperatures prevalent in the same areas during winter.

The 24 hour Flu ... or what most people think of as the 24 hour flu, is usually a relatively mild case of food poisoning, or Salmonellosis. (The flu is a respiratory virus with primary effect upon the lungs. An absence of the "Primary Effect" means it’s not "FLU".) see… Patent medicine ... Colloidal Silver, above.

The Whiskey Flu … a form of food poisoning, related to the excessive consumption of alcohol during the previous 12 to 24 hrs (or more, if you are really persistent). Not related to the Flu, or Salmonella. 2 to 4 oz of "Matol" aka "KM" a black nasty tasting multi level marketed liquid, will usually fix this problem within ½ hr or so. Find it on the web.

Notable Recent Salmonella "Outbreaks"

Tomatoes :

Tomatoes have been linked to 13 outbreaks of salmonella since 1990, according to "The Center For Science In The Public Interest" ... A Washington Advocacy Group (sounds like a lobbiest front to me ... but I'm not certain of that).

The 2008 "Tomato Warning" involved a salmonella contamination, possibly internal to the tomato. (I have my doubts)

Roughly 943 people were sickened, beginning April 2008, though no deaths were reported.

This may have been caused by root absorption from contaminated soil.

Skin or surface contamination is most probable, which can be avoided by washing the tomatoes with dish soap and cool water as part of the preparation process. Tomatoes can also be externally sterilized using colloidal silver, or hydrogen peroxide, or a mild Chlorox (chlorine bleach) solution.

The CDC/FDA /etc. (July 02, 2008) added "additional probable sources" of contamination and expanded the reporting area to include Canada.

Do you think they were really looking for the source of the problem, or are they just trying to make it look scary enough to force a new and expensive tracking system on producers and consumers.

If it is about a tracking system, it's about money, not food safety.

The final result of tracking will be that no small farmer will have the ability to market his/her produce without selling it through a co-op or other major marketing wholesaler. Tracking equates to tax collection.
No Tracking ... wash your fruits and vegetables!

My notions: (Opinion … supported by FACT, but not necessarily Correct!)

Tomatoes are a staple, eaten by almost every American (303 million +) one or more meals per day. Wash the surface and there is virtually no risk, regardless of where they were grown.

Raw tomatoes were identified as the "likely source" of the 2008 salmonella outbreak. (Never Proven)

Risks are minimal (heck, 450 people DIE every year from acetaminophen poisoning ...that's 20 per week ... compared to 25 per week made ill eating tomatoes, which might not even be the source).

This is a "tempest in a teapot", probably raised to divert attention from something more serious, such as the FDA loosing a lawsuit filed to force the FDA to address the toxicity of mercury amalgam dental fillings.

Peanuts

2009 … Salmonella Typhimurium in peanut butter and peanut paste produced by the Peanut Corporation of America (PCA) at its Blakely, Georgia processing plant.

Known Facts: (CDC and FDA Websites)

The outbreak of Salmonella serotype Typhimurium was first noticed by CDC in September 2008, and continues through February 2009.

The outbreak includes 550 reported infections (43 states, 1 CDN Province) and 8 deaths.

PCA is a wholesale processor and distributor of Peanut Butter and Peanut Paste.

PCA does not make retail sales of its’ products.

The PCA plant at Blakely GA was not compliant with Current Good Manufacturing Practices required by the FDA. These deficiencies are related to cleaning programs, product processing, plant maintenance, finished product storage procedures as well as failure to implement steps to mitigate Salmonella contamination in the facility.

PCA is currently undergoing a criminal investigation related to this incident, in part because they (apparently) knowingly shipped salmonella contaminated product, after repeatedly re-testing portions of known contaminated "batch(s)" until they could obtain a "negative" test sample.

The FDA and Georgia Department of Health are currently being accused by the US Press of "Lax Law Enforcement" tactics in this matter. (Gee, the FDA budget is only 2.2 billion dollars a year, what do we expect?)

Peanut butter is sold by PCA in bulk containers ranging in size from five (5) to 1,700 pounds.

Peanut paste is sold in sizes ranging from 35-pound containers to tanker containers.

PCA distributed potentially contaminated product to more than 1000 consignee firms, for use as an ingredient in retail products, such as cookies, crackers, cereal, candy, pet food and ice cream sold directly to consumers under hundreds of brand names.
